It seems like every other person you bump into is on some sort of a gluten free diet. Nearly everything that once existed with gluten can now be created without it. The thing is, sometimes eating gluten free is no healthier than eating foods

Gluten is simply the combination of two proteins (glutenin and gliadin) found in wheat, barley and rye. That's it! Nothing more. Nothing less.

Because the byproducts of gluten are in so many things, you could be eating gluten and not even know it. Gluten can be found in processed meats, salad dressings, gravies, soups and candy. If you've recently had soy sauce, licorice or beer, you've consumed gluten.

Gluten is also what people with celiac disease can’t digest. In fact, a person with celiac disease needs to steer clear of gluten altogether. About 1 in 133 people have celiac disease. It’s a serious autoimmune condition. Only a blood test can determine whether or not someone has this disease. Weight loss, bone loss, hair loss, iron deficiency and cavities are a few signs, to name a few, of celiac disease.

Many people go undiagnosed. If you suspect you may have celiac disease, see a doctor. The inability to digest food can lead to much greater problems than just a stomach ache.

Many more people, however, deal with gluten sensitivities. Unexplained bloating, joint pain, fatigue, irritable bowel syndrome  and weight gain are a few signs one may be gluten intolerant. Estimates suggest that upwards of 18 million Americans have non-celiac gluten sensitivity.

A good way to know if you’re sensitive to gluten is to completely eliminate it from your diet for a couple weeks. Keep a food journal, noting how you feel, sleep and perhaps what you weigh. Do this everyday. After two weeks, reintroduce gluten. Start with one meal a day. If you’re sensitive, you’ll know pretty fast.

You'll probably notice bloating, gas or some other tell tale sign of sensitivity. People with either gluten sensitivity or celiac disease can greatly improve their gut health by cutting out gluten.

Foods To Avoid With A Gluten Intolerance (and 7 To Eat)

Gluten can trigger inflammation. This is a big deal. People who deal with chronic inflammation have a super tough time losing weight.

Examples of chronic inflammation include allergies, recurrent bronchitis, recurrent sinus infections, arthritis, rashes that don't heal, fatigue, etc. Eating foods that fight inflammation can help, but avoiding foods like gluten can reduce it.

This is probably where most confusion lies. Personally, I don’t eat gluten. Neither does anyone in my family. I’ve also never had a client work their way off gluten and regret it. In fact, most people lose weight and almost everyone feels better in pretty short order.

It's the garbage gluten free products that don't do us any favors. Although, a box of gluten free cookies is really nice to have on hand if you've never been able to enjoy a regular chocolate chip cookie before.

That being said, most gluten free food products are no healthier than their glutenous counterparts. A gluten free cookie is still a cookie without gluten. Gluten free pretzels are still pretzels without gluten. Gluten free junk food is still junk food…without gluten. Jumping from once processed food diet to another processed food diet doesn’t do your health much good.

In the forest of processed gluten free foods, we’ve lost sight of foods that are naturally free of gluten. It came as no surprise that after everyone started following the meal plan (not necessarily dieting), they lost weight.

This is just a really short list, but it’s a good start. Remember, gluten is hidden in a lot of things. Meat loaf contains a lot of bread, ice cream often contains glutenous byproducts and seasoned or salted nuts often contain additives that contain gluten. The best way to avoid gluten is to avoid buying processed foods. Just about anything that comes in a box or package and can sit on a shelf for a long period of time (barring staples like rice), are hot spots of gluten.

Gluten is a protein in wheat, barley, rye, and some oats. When an individual with celiac disease ingests gluten, their immune system reacts abnormally, causing inflammation in the small intestine. Due to inflammation, the small intestine's villi (i.e., the tiny, fingerlike tubules lining the small intestine that absorb nutrients from food into the bloodstream) may become destroyed. Destruction of intestinal villi results in symptoms of nutritional malabsorption, bloating, nausea, vomiting, diarrhea, constipation, and weight loss. Over time, systemic signs of celiac disease can occur, such as fatigue, anemia, osteoporosis, and damage to the nervous system, causing neuropathy and seizures. 

In children, celiac disease leads to similar gastrointestinal symptoms but may further impair growth and development due to the malabsorption of essential vitamins and minerals. For children with celiac disease, consuming gluten may lead to delayed puberty and increase the risk of learning disabilities. In adults and children, celiac disease can present with itchy, blistering skin rashes in a dermatological condition known as dermatitis herpetiformis.

There is currently no cure for celiac disease; however, following a strict diet that avoids gluten can help manage symptoms and decrease intestinal inflammation.

A celiac disease diet refers to a diet that eliminates foods and drinks that contain gluten to relieve celiac disease symptoms and reduce intestinal inflammation. A gluten-free diet avoids grains, pasta, cereals, and processed foods. Those with celiac disease are typically recommended to follow this diet for life to prevent the recurrence of intestinal damage. Even the slightest amount of gluten can trigger an immune system reaction that may cause damage. Individuals with celiac disease and gluten intolerance often become experts at reading the ingredient list at the back of a food package to ensure the foods they are eating don’t contain gluten. The Food and Drug Administration (FDA) has set a standard of fewer than 20 parts per million of gluten as the criteria for using the claim “gluten-free” in packaged foods and beverages. A clinician or registered dietician can guide individuals on what to eat and drink to maintain a well-balanced diet. 

Celiac disease diets can help reduce the inflammation and destruction of intestinal villi that occurs with gluten consumption. Once ingested, gluten is broken down into gluten peptides. Typically, these peptides pass through the small intestine. In the small intestine, local immune cells called macrophages activate the immune system if they detect pathogens. In individuals with celiac disease, gluten peptides get recognized by macrophages as foreign proteins, and  T-cells are activated. T-cells may then start producing inflammatory cytokines like interleukin 15 (IL-15) that attract other immune cells and induce inflammation, which ultimately causes symptoms ranging from asymptomatic to severe malabsorption.  Avoiding gluten through a celiac disease diet minimizes the autoimmune attack on the gastrointestinal system.

The foods that are best on a celiac disease diet include naturally gluten-free food groups such as fruits; vegetables, including potatoes; meats, including poultry, fish, and seafood; beans; legumes; nuts; and dairy. Specific grains like rice, millet, corn, chia, quinoa, chickpea, pure wheat grass, and barley grass are gluten-free and acceptable within a celiac disease diet. Other grains, including amaranth, arrowroot, buckwheat groats, cassava, flax, soy, and tapioca, are likewise gluten-free. Oats are sometimes considered gluten-free if they are not cross-contaminated with sources of gluten. Oats, rice, and corn are often processed in the same facility as wheat gluten products. One can check product labels to ensure that it is marked as gluten-free, or for a warning label, before consumption. Most beverages are gluten-free, including juices, sodas, and sports drinks.
